FC is unchecked by default, MC is checked by default. I can't for the life of me figure out what they are. MC is multicast maybe?
What do they stand for? (I feel really dumb right now).
FC/MC on "Ports" page?

If you mouse over the FC and MC it will tell you Flow Control and Multi Cast
You should enable FC under MOST circumstances, need to have Eric change the default behavior here.
If you are feeding a switch with 1G port(s) then feeding 100M ports you NEED Floc Control or performance SUCKS!!!!!!

If you do not enable FC you get crappy downloads and OK uploads when you are feeding the switch from a 1G then feeding airMAX at 100M

But wouldn't you have to be running more than 100Mb towards said port(s)?

No, you should enable it under most cases.
My airMAX 100 Mb radios preform better with FC enabled on the ports going to the radio and the 1G port from the router but always test which work best for your network.
